The pretty Cumbrian market town of Appleby in Westmorland boasts an historic castle; a delightful tree lined main street and the best bakery for miles around!
Appleby Bakery has been located in the town for 25 years this November, and two and a half years ago owners Jackie Kirkpatrick and Carol Thornton realised their dream of opening their own purpose designed bakery.
All produce is freshly prepared in house using Cumbrian produce wherever possible – locally harvested strawberries, raspberries, apples and plums plus free range eggs.
No artificial colours or additives are added to products and they always invest in superior additional ingredients such as best butter, sultanas, vintage cider vinegar, brandy and champagne.
“We have developed our light citrusy Christmas pudding which was highly commended at the North West Fine Food Awards last year from a combination of recipes handed down over the years; The flour is sifted by hand, oranges and lemons are freshly squeezed, and then the pips and pith simmered in muslin to bring out their natural pectins. Christmas cakes are given the same attention to detail and once cooked are “fed” with best brandy to keep them moist.”
In 2007 Appleby Bakery sold 200 Christmas puddings, last year this increased ten fold to 2000, and the hard working ladies are anticipating a further increase of 50% for Christmas 2009.
